June, July, and August are the season for Scomberomorus brasiliensis, our Sororoca.
Sororoca is abundant on our coast and forms large schools that travel from the south to the northeast of Brazil. It is highly valued by coastal communities due to the quality of its meat and the fact that it swims close to rocky shores and reefs, where only artisanal fishermen can reach.
Sororoca in Cornmeal!
One of the most traditional ways to prepare sororoca is in steaks breaded with cornmeal. Served with rice, bananas, and farofa, it is a typical dish along the coast from the south to the northeast of the country.
Sororoca is a tradition on the line, in the net, and on the table of fishermen.
Sororoca meat is very tender, white, and versatile in preparation, with few bones.
It is very tasty grilled in steaks, roasted whole over coals, in ceviche, and also makes good sashimi!
The time when schools of sororoca approach the coast is in late autumn and during winter, in the months of June, July, August, and September. Therefore, during this time, fish markets and restaurants usually have very fresh sororocas.

The fish of the day. Respect seasonality and enjoy the best flavor.
Paying attention to seasonality ensures the best fish on your table.
Seasonality plays a fundamental role when choosing fish, as it is directly related to the availability, quality, and sustainability of fish stocks. Here are some reasons why seasonality is important when selecting fish:
-
Freshness: Choosing seasonal fish guarantees that you are getting a fresher product. During the peak season for a particular fish, it is more likely to be freshly caught, which directly influences its quality and flavor.
-
Sustainability: Seasonality allows for the proper management of fishing resources. By respecting breeding periods, overfishing can be avoided and species preservation ensured. Thus, choosing fish in its appropriate season contributes to the sustainability of marine ecosystems.
-
Variety: By following seasonality, you will have the opportunity to experience different fish species throughout the year. Each season brings a diversified offer, allowing you to explore new flavors, textures, and preparations.
-
Price: Fish at their peak season tend to be more abundant, which can result in more accessible prices. Increased supply can benefit the consumer in terms of cost-effectiveness.
-
Connection with nature: Choosing fish according to seasonality provides a deeper connection with nature and natural cycles. By following the seasons, you align with the rhythms of nature and value the diversity and harmony of ecosystems.
Therefore, by considering seasonality when choosing fish, you support the sustainability of fishing resources, enjoy fresher and more varied products, and connect with nature and your relationship with food. It is a conscious and responsible way to enjoy seafood sustainably.
