Famous in sport fishing due to its jumps when hooked, but not highly valued in cuisine. The reason is simple: lots and lots of bones. However, the meat is very tasty, and there's a technique to remove the meat with a spoon. The bones stick to the skin, so you just remove the fillet and scrape it with a spoon. The meat is soft and very white, great for making fish cakes. If you haven't tried a ladyfish cake yet, we highly recommend it! A very affordable fish.
