Don't be put off by its appearance when buying it! In fact, sometimes this fish is presented in fishmongers with its swim bladder/stomach in its mouth. This is due to the fact that it lives in deep waters and when caught, it abruptly moves from an environment with higher pressure (sea bottom) to one with lower pressure, which causes the swim bladder to expand and push the stomach into the mouth.
