Zarbo is a small, pale fish. It is always the cheapest, but it is not recommended for bacalhoada (cod stew). It has an elongated body and when shredded, its flakes become tougher. It works better in dishes where texture is not very important, such as: codfish cakes, pirão (fish porridge), soups, stews, and pies.

General characteristics

Unlike its cousin Gadus morhua, the Tusk has a long, continuous dorsal fin. It lives on the seabed, at depths of up to 1000 meters.
