Brazil's fish and seafood sector has been experiencing a phase of growth and innovation, marked by the appreciation of underexplored species, special cuts, and techniques such as dry aging and fish charcuterie. Over the past five years, this movement has been driven by specialists who disseminate knowledge and spark consumer curiosity. Now, two of these professionals have come together to organize the 1st Educational Seafood Congress — an immersive and unprecedented event, which will take place from December 02 to 06, 2024, in Rio de Janeiro.
Organization and Objective
Rodolfo Villar, founder of Projeto A.Mar, and Gerônimo Athuel, chef and founder of Grupo Ocyá, have joined forces to promote five days of immersion in the world of seafood. The objective is to deepen participants' knowledge of advanced techniques, sustainable practices, and the crucial role of fishing and aquaculture in food security.
Program and Content
The congress will feature over 30 hours of classes, divided into 10 modules taught by renowned specialists in the fish and gastronomy sector, including:
- Advanced handling and maturation techniques
- Dry aged fish and the Japanese ikejime technique
- Unconventional fish species and differentiated cuts
- Full utilization of fish
- Preservation, semi-preservation, and fermentation techniques
- Importance of fishing and aquaculture in global food security

Among the invited speakers are César Calzavara, considered Brazil's leading tuna specialist, Cintia Miyaji, a reference in sustainability in the fish supply chain, and André Medeiros, a master and doctor in Food Hygiene specializing in fish quality and safety.
